Ingredients
- 6 links breakfast sausage links
- 2 medium potatoes, diced small
- ½ medium yellow onion, diced
- 4 large eggs
- ¾ cup sharp cheddar cheese, shredded
- 4 count biscuits, refrigerated
- 2 tbsp fresh chives, chopped
- ½ cup hot sauce or salsa

Preheat oven to 400°F. Place biscuits on a small baking sheet and slide into oven.

Brown sausage links in a 12-inch cast iron skillet over medium-high heat, turning occasionally, until cooked through, ~8 minutes. Transfer to a plate.

Add diced potatoes and onion to the same skillet with the sausage fat. Cook uncovered, stirring occasionally, until potatoes are golden and tender, ~7 minutes.

Slice cooked sausage into bite-sized pieces and return to the skillet. Make four shallow wells in the potato mixture.

Crack one egg into each well. Sprinkle cheese over the entire skillet. Cover and cook over medium heat until egg whites set, ~4 minutes.
