Ingredients
- 2 cups cooked rice (white or basmati)
- 1 whole (juiced) lemon
- ¼ cup roasted unsalted peanuts
- ½ cup frozen peas
- ½ tsp turmeric powder
- 8 leaves curry leaves (or cilantro, chopped)

Heat 2 tbsp oil in a large skillet over medium heat until shimmering, about 1 minute.

Add peanuts and toast 90 seconds until fragrant. Stir in turmeric and curry leaves, cook 30 seconds.

Add frozen peas and stir for 1 minute until they begin to thaw and soften.

Add cooked rice and break up any clumps with a spoon. Toss constantly for 2 minutes until heated through.
