Lemon Herb Grilled Chicken

Ingredients

  • 1.5 lbs chicken breasts or thighs, boneless
  • 1 whole lemon (zested and juiced)
  • 3 cloves garlic, minced
  • 3 tbsp fresh herbs (oregano, thyme, or rosemary), chopped
  • ¼ cup olive oil
  • ¾ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Instructions

    Mix lemon juice and zest, garlic, herbs, olive oil, salt, pepper, and red pepper flakes in a bowl.

    Pat chicken dry with paper towels. Place in a shallow dish and coat evenly with marinade.

    Marinate for 15 minutes at room temperature, or up to 4 hours refrigerated.

    Preheat grill to medium-high (about 400°F). Oil the grates lightly with a brush.

    Place chicken on grill, skin-side down. Do not move for 6–7 minutes until charred.

    Flip and grill another 5–7 minutes until internal temp reaches 165°F at the thickest point.

    Transfer to a clean plate and rest for 3–5 minutes before serving.
