  • 1 can (14 oz) sweetened condensed milk
  • ½ cup lemon juice (about 3 lemons)
  • 1 tbsp lemon zest
  • 3 large egg whites
  • ¼ cup granulated sugar
  • ¼ tsp cream of tartar
  • 4 pieces shortbread cookies or crispy wafer

Instructions

    Whisk sweetened condensed milk with lemon juice and zest until thick and glossy, about 1 minute.

    Divide lemon curd among 4 serving glasses or place on shortbread bases.

    Combine egg whites, sugar, and cream of tartar in a heatproof bowl over simmering water.

    Whisk constantly until sugar dissolves and mixture reaches 160°F (71°C), about 3 minutes.

    Transfer to stand mixer and whip on high until stiff, glossy peaks form, 2–3 minutes.
