Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 whole (zested + juiced) lemon
  • 3 whole garlic cloves
  • 1.5 tsp dried oregano
  • ⅓ cup olive oil
  • 1 pinch salt and pepper to taste

Instructions

    Cut chicken into 1.5-inch cubes. Mince garlic and whisk together with lemon juice, zest, oregano, olive oil, salt, and pepper.

    Toss chicken with marinade, coating thoroughly. Let sit at room temperature while you heat the grill or grill pan.

    Thread chicken onto metal or wooden skewers (soak wood 15 minutes first), leaving small gaps between pieces.

    Heat grill or grill pan to medium-high. Once you see smoke rising, place skewers across the grates.

    Grill 10–12 minutes, turning every 3 minutes, until chicken edges are charred and centers reach 165°F when probed.
