Ingredients

  • 1.5 lb beef sirloin or chuck, cut into 1.5-inch cubes
  • ¼ cup olive oil
  • 3 tbsp red wine vinegar
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt and black pepper to taste
  • 1 whole lemon, juiced
  • 1 cup Greek yogurt
  • ½ whole cucumber, grated
  • 2 tbsp fresh dill, chopped
  • 8 pieces pita bread or flatbread

Instructions

    Whisk together olive oil, vinegar, garlic, oregano, cumin, salt, pepper, and lemon juice in a bowl.

    Add beef cubes to the marinade and toss until fully coated. Cover and refrigerate for at least 30 minutes.

    While beef marinates, stir yogurt, grated cucumber, and dill in a small bowl. Season with salt and pepper. Chill until serving.

    Preheat grill to medium-high heat, about 400°F. Let grate heat for 5 minutes.

    Thread marinated beef cubes onto metal skewers, leaving 1/4-inch space between pieces for even cooking.

    Grill skewers 3-4 minutes per side without moving them, until edges are charred and interior is medium-rare.

    Transfer skewers to a plate and rest 3 minutes before serving.

    Warm pita bread on the grill 30 seconds per side or wrap in foil and heat at the grill edge.
