Ingredients

  • 1.5 lbs lamb shoulder, cubed into 1.5-inch pieces
  • ¼ cup olive oil
  • 1 whole lemon (juiced)
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 to taste salt and pepper to taste

    Soak wooden skewers in water for 15 minutes to prevent charring.

    Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.

    Add lamb cubes to marinade, toss to coat evenly, and let sit 15 minutes.

    Heat grill to medium-high until you can hold your hand 3 inches above it for 3 seconds.

    Thread lamb pieces onto skewers, leaving 1/4 inch between each chunk.

    Grill skewers 8–10 minutes, rotating a quarter turn every 2 minutes, until edges char.

    Lamb is done when internal temperature reaches 130°F for medium-rare.
