Ingredients
- ½ lb ground lamb
- ¼ medium onion, finely minced
- 1 tsp cumin, paprika, and allspice
- 2 tbsp fresh parsley, chopped
- 1 pinch salt and black pepper
- 2 pieces pita bread
- ⅓ cup plain yogurt
- ½ large cucumber, thinly sliced
- 1 medium tomato, diced

Combine lamb, minced onion, cumin, paprika, allspice, parsley, salt, and pepper in a bowl.

Form mixture into 4 small oblong patties, roughly the size of your finger.

Heat oil in a skillet over medium-high until shimmering, about 90 seconds.

Cook kofte 4–5 minutes, turning once halfway, until edges are caramelized and inside is cooked through.

Warm pita in the same skillet 30 seconds per side until soft and pliable.

Spread yogurt down the center of each pita, then layer with cucumber, tomato, and 2 kofte.
