Ingredients
- ¾ lb ground lamb
- ½ medium yellow onion, finely minced
- ½ cup fresh mint leaves, chopped, divided
- 1.5 tsp ground cumin, coriander, and paprika
- 1 cup cherry tomatoes
- 1 small red onion, thinly sliced
- 1 whole lemon

Combine ground lamb, minced onion, half the mint, spices, salt, and pepper in a bowl.

Form mixture into 4 long kebab shapes. Heat oil in a heavy skillet over medium-high.

Sear kebabs 3–4 minutes per side without moving until edges are deeply browned and cooked through.

Pulse remaining mint with lemon juice, garlic, and a pinch of salt to make a quick chutney.
