Ingredients

  • ¾ lb ground lamb
  • ½ medium yellow onion, finely minced
  • ½ cup fresh mint leaves, chopped, divided
  • 1.5 tsp ground cumin, coriander, and paprika
  • 1 cup cherry tomatoes
  • 1 small red onion, thinly sliced
  • 1 whole lemon

Instructions

    Combine ground lamb, minced onion, half the mint, spices, salt, and pepper in a bowl.

    Form mixture into 4 long kebab shapes. Heat oil in a heavy skillet over medium-high.

    Sear kebabs 3–4 minutes per side without moving until edges are deeply browned and cooked through.

    Pulse remaining mint with lemon juice, garlic, and a pinch of salt to make a quick chutney.

    Plate kebabs with sliced red onion, cherry tomatoes, and a spoonful of mint chutney on top.

    Squeeze fresh lemon juice over the plate and serve immediately.
