Ingredients
- ¾ lb beef sirloin steak, 1 inch thick
- 1 cup kimchi, drained
- ½ medium yellow onion, cut into thick wedges
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1.5 cups fresh mixed salad greens
Instructions
- 1
Pat the steak dry with paper towels. Season generously with salt and black pepper on both sides.
- 2
Heat a 12-inch cast iron skillet or large griddle over medium-high heat until smoking, about 2 minutes.
- 3
Sear the steak 2 minutes per side without moving—the crust should be deeply golden. Transfer to a plate to rest.
- 4
Add onion wedges and kimchi to the same pan. Cook, stirring occasionally, until edges char and kimchi crisps, about 4 minutes.
- 5
Whisk soy sauce and sesame oil together in a small bowl. Slice the rested steak against the grain into strips.
- 6
Arrange steak, grilled vegetables, and salad on a plate. Drizzle with soy-sesame sauce and serve immediately.
