Ingredients

  • 500 g sirloin steak (about 1 inch thick)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • ½ tbsp ginger, minced
  • 2 stalks scallions, chopped

Instructions

    Pat the sirloin completely dry with paper towels. Season generously with salt and black pepper on both sides.

    Heat a 12-inch cast iron skillet over high heat until it's smoking — about 2 minutes. The pan is ready when water droplets sizzle and evaporate instantly.

    Sear the steak 90 seconds per side without moving — you want a dark crust. Flip only once. Transfer to a plate to rest.

    Return the skillet to medium heat. Add garlic and ginger, stirring constantly until fragrant, about 30 seconds — don't let it burn.

    Pour in soy sauce and sesame oil, swirling to combine. The glaze should bubble and darken slightly, about 15 seconds.

    Slice the steak against the grain into bite-sized pieces. Toss with the glaze and scatter scallions on top. Serve immediately.
