Ingredients
- 500 g sirloin steak (about 1 inch thick)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- ½ tbsp ginger, minced
- 2 stalks scallions, chopped

Pat the sirloin completely dry with paper towels. Season generously with salt and black pepper on both sides.

Heat a 12-inch cast iron skillet over high heat until it's smoking — about 2 minutes. The pan is ready when water droplets sizzle and evaporate instantly.
