Ingredients

  • 1 lb beef sirloin, cut into 1-inch cubes
  • ½ lb beef tripe, sliced into 2-inch pieces
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 4 stalks green onions, cut into 3-inch lengths

Instructions

    Toss beef cubes with 2 tbsp soy sauce, 1 tbsp sesame oil, and minced garlic. Let sit while you prep.

    Pat tripe dry and toss with remaining soy sauce and sesame oil.

    Heat a cast iron skillet or grill pan over high heat until smoking hot, about 2 minutes.

    Working in batches, sear beef cubes without stirring for 90 seconds per side until deeply browned.

    Push beef to the side, add tripe to the pan, and sear 2 minutes per side until edges char.
