Ingredients
- 8 bone-in, skin-on chicken thighs
- 3 tablespoons olive oil
- 1 juiced lemon
- 4 cloves, minced garlic
- 2 teaspoons dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper

Preheat oven to 375°F (190°C). In a small bowl, mix 3 tbsp olive oil, juice of 1 lemon, 4 minced garlic cloves, 2 tsp dried oregano, 1 tsp salt, and 1/2 tsp black pepper.

Place 8 bone-in, skin-on chicken thighs in a baking dish. Pour the marinade over the chicken, turning to coat each piece evenly.

Cover the dish with foil and bake for 30 minutes, until the chicken is nearly cooked through and juices run clear when pierced.

Remove the foil and increase oven temperature to 425°F (220°C). Roast for 10-15 minutes more, until the skin is golden and crispy.
