Dong'an Chicken

Ingredients

  • 1 lb chicken breast
  • 2 tbsp ginger
  • 3 cloves garlic
  • 4 stalks scallions
  • 1 medium cucumber
  • 2 tbsp chili oil

Instructions

    Slice the 1 lb chicken breast into thin strips. Peel and mince the 2 tbsp ginger and 3 garlic cloves; slice the 4 scallions into 2-inch pieces.

    Heat a large skillet over high heat. Add the chicken strips and stir-fry until they turn white and are just cooked through, about 5 minutes. Remove and set aside.

    In the same skillet, add the minced ginger, garlic, and half the scallions. Stir-fry until fragrant, about 1 minute.

    Return the chicken to the skillet. Add the 2 tbsp chili oil and 1 sliced cucumber. Toss everything together until the cucumber is slightly softened and the sauce coats the chicken, about 2 minutes.

    Serve hot over rice, garnished with the remaining scallions.
