Ingredients

  • 1 lb potatoes
  • ½ cup pepperoni slices
  • 1 cup mozzarella cheese, shredded
  • 4 slices bread (ciabatta or sourdough), sliced
  • 2 tbsp hot honey (or 2 tbsp honey mixed with pinch cayenne)
  • 2 tbsp butter

Instructions

    Cut potatoes into fries, soak in water 5 minutes, then pat completely dry.

    Heat oil in a large skillet over medium-high until shimmering. Fry potatoes in batches until golden, 8–10 minutes total. Transfer to a paper-towel-lined plate; season with salt.

    In the same skillet (no cleaning needed), layer 2 bread slices with pepperoni, mozzarella, and another slice of bread. Butter the outsides generously.

    Lower heat to medium. Pan-fry each sandwich until bread is golden and cheese is melted, 3–4 minutes per side. Watch for sizzle and golden crust.

    Transfer sandwich to a cutting board. Drizzle hot honey over the top, then slice in half diagonally.

    Serve hot with fries on the side.
