Ingredients
- 1 lb potatoes
- ½ cup pepperoni slices
- 1 cup mozzarella cheese, shredded
- 4 slices bread (ciabatta or sourdough), sliced
- 2 tbsp hot honey (or 2 tbsp honey mixed with pinch cayenne)

Cut potatoes into fries, soak in water 5 minutes, then pat completely dry.

Heat oil in a large skillet over medium-high until shimmering. Fry potatoes in batches until golden, 8–10 minutes total. Transfer to a paper-towel-lined plate; season with salt.

In the same skillet (no cleaning needed), layer 2 bread slices with pepperoni, mozzarella, and another slice of bread. Butter the outsides generously.
