Ingredients

  • 3 medium fresh jalapeños
  • 4 oz cream cheese
  • 1 cup sharp cheddar cheese, shredded
  • 4 slices bread (sourdough or white)
  • 2 tbsp butter
  • 1 cup total salsa and sour cream for serving

Instructions

    Slice jalapeños lengthwise and scrape out seeds with a spoon to reduce heat—leave some for flavor.

    Heat a skillet over medium-high until a butter cube sizzles on contact, about 60 seconds.

    Toast jalapeño slices in the skillet, cut-side down, until edges blacken and soften, ~3 minutes total.

    Spread cream cheese on two bread slices, top with cheddar, crispy jalapeños, then cheddar and cream cheese again.

    Butter the outside of each sandwich. Sear in the same skillet over medium heat until golden and crispy, 2–3 min per side.

    Slice each sandwich diagonally. Serve hot with salsa and sour cream for dipping.
