- 8 oz Oaxaca cheese (quesillo)
- 4 oz chorizo, diced
- 2 tbsp fresh cilantro, chopped
- 1 whole jalapeño, thinly sliced
- 8 whole corn or flour tortillas
- 1 whole lime, cut into wedges

Heat a 10-inch skillet over medium-high heat. Add chorizo and cook, breaking it apart, until edges crisp and fat renders, about 3 minutes.

Transfer chorizo to a plate with a slotted spoon, leaving about 1 tbsp fat in the pan.

Tear the quesillo into 4-5 large chunks and add them to the same pan over medium heat.
