Ingredients
- 8 pieces chicken thighs, bone-in and skin-on
- 3 tbsp honey
- 2 tbsp fish sauce
- 6 cloves garlic cloves, minced
- 1 whole lime
- 1 whole shallot, thinly sliced

Pat chicken thighs dry with paper towels. Season generously with salt and black pepper on both sides.

Whisk honey, fish sauce, minced garlic, and juice from half the lime in a small bowl until combined.

Arrange chicken skin-side up on a sheet pan. Brush the glaze over each piece, coating well.
