Ingredients

  • 1.75 cups all-purpose flour
  • ½ cup butter, softened
  • ¾ cup brown sugar
  • 1 whole egg
  • 1 tsp vanilla extract
  • 1 pint vanilla ice cream

Instructions

    Mix flour with 0.5 tsp salt and 0.5 tsp baking soda in a bowl.

    Beat butter and brown sugar until pale and fluffy, about 2 minutes.

    Add egg and vanilla extract; mix until combined.

    Stir in flour mixture until just combined. Do not overmix.

    Preheat oven to 350°F. Line two baking sheets with parchment paper.

    Drop rounded tablespoons of dough 2 inches apart on the baking sheets.

    Bake until edges are golden and centers still look soft, 10–12 minutes.

    Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

    Let cookies cool completely, about 15 minutes. Freeze for 10 minutes.

    Soften ice cream at room temperature for 2–3 minutes until spreadable.

    Spread 2 tbsp ice cream on the flat side of one cookie.

    Top with a second cookie, flat side down. Press gently and freeze immediately.
