Ingredients

  • 10 oz ground lamb
  • ¼ cup breadcrumbs
  • 3 tbsp fresh herbs (parsley, oregano, or dill, chopped)
  • 1 can (14.5 oz) canned diced tomatoes
  • 8 oz mushrooms, halved
  • ½ medium red onion, diced

Instructions

    Mix ground lamb, breadcrumbs, herbs, salt, and pepper in a bowl until just combined.

    Roll mixture into 8–10 meatballs and set aside on a plate.

    Heat oil in a large skillet over medium-high until shimmering, then add meatballs without stirring for 2 minutes until bottoms brown.

    Add diced onion and mushrooms around the meatballs, stir gently, cook 2 minutes until fragrant.

    Pour in tomatoes with juice, stir gently, reduce heat to medium-low, and simmer 8 minutes uncovered.

    Taste and adjust salt and pepper. Serve hot in bowls with sauce spooned over.
