Ingredients

  • 2 fillets white fish fillets
  • 2 slices bread slices
  • ¼ cup fresh herbs (parsley, dill, or chives)
  • 2 tablespoons olive oil
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon black pepper

Instructions

  1. 1

Toast the 2 bread slices until golden and crisp, about 3-4 minutes per side. Set aside.

  2. 2

Pat the 2 fish fillets dry and season both sides with the 0.25 tsp black pepper and a pinch of salt.

  3. 3

Heat 1 tbsp of the olive oil in a skillet over medium-high. Add the fish and cook until opaque and flaky, about 3-4 minutes per side. Remove from heat.

  4. 4

In a small bowl, mix the remaining 1 tbsp olive oil, 0.5 tsp red pepper flakes, and the 0.25 cup chopped fresh herbs.

  5. 5

Place the cooked fish on the toasted bread, spoon the herb-oil mixture over the top, and serve immediately.
