Ingredients
- 2 count large flour tortillas
- ½ cup hummus
- 1 medium zucchini
- 1 large bell pepper (any color)
- ¼ count red onion
- 1 cup fresh spinach or arugula
- 3 tbsp tahini
- 1 count lemon (juiced + zest)

Slice zucchini lengthwise into 1/4-inch planks. Slice bell pepper into wide strips. Thinly slice red onion.

Heat a skillet over medium-high until it shimmers, about 2 minutes. Brush vegetables lightly with oil and salt.

Grill vegetables in batches 2–3 minutes per side until charred and tender. Transfer to a plate.

Spread hummus on the inside of each tortilla. Layer with greens, then grilled vegetables.

Roll each tortilla tightly. Wipe the skillet and place wraps seam-side down. Cook 90 seconds per side until golden.

Whisk tahini, lemon juice, lemon zest, and 2 tbsp water until smooth. Serve wraps with dipping sauce and side salad.
