Ingredients

  • 4 cups water
  • 1 tbsp dashi powder or instant dashi
  • 2 tbsp soy sauce
  • 6 oz fresh ramen noodles
  • 2 heads bok choy, halved lengthwise
  • 2 whole eggs

Instructions

    Bring water to a boil in a large pot over high heat, then whisk in dashi powder and soy sauce.

    Add ramen noodles and bok choy. Simmer until noodles are tender and bok choy is just wilted, ~4 minutes.

    While noodles cook, heat 2 tbsp oil in a skillet over medium-high until shimmering.

    Crack eggs into the skillet. Fry until whites set but yolks jiggle, ~3 minutes.
