Ingredients

  • 3 cups cooked rice, chilled (day-old preferred)
  • 1 cup ham, diced small
  • ½ lb large shrimp, peeled and deveined
  • 1 cup pineapple chunks, fresh or canned (drained)
  • 3 whole eggs
  • 2 tbsp soy sauce
  • ½ cup scallions, chopped
  • 2 tbsp neutral cooking oil

Instructions

    Heat oil in a large skillet over medium-high heat until it shimmers, ~60 seconds.

    Add shrimp and cook, stirring occasionally, until pink and cooked through, ~3 minutes.

    Push shrimp to the side. Crack eggs into the pan and scramble until just set, ~2 minutes.

    Add rice, breaking up clumps with the back of a spoon, and stir-fry for 2 minutes.

    Toss in ham, pineapple, soy sauce, and scallions. Stir everything together for 1 minute until hot.
