Ingredients

  • ½ cup pineapple juice
  • ½ cup BBQ sauce
  • 1.5 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1.25 pounds chicken thighs or breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 pinch salt and pepper

Instructions

    Mince the garlic cloves until the pieces are smaller than a grain of rice — about the size of pencil-tip dots.

    Pour the pineapple juice, BBQ sauce, and soy sauce into a small bowl and whisk together until combined, about 10 seconds.

    Add the minced garlic to the bowl and stir until mixed throughout.

    Pat the chicken dry with a paper towel, then sprinkle both sides lightly with salt and pepper.

    Heat a large skillet over medium-high heat and add the olive oil until it shimmers and slides quickly when you tilt the pan, about 90 seconds.

    Place the chicken in the hot skillet in a single layer and let it cook without moving for 5 minutes until the bottom turns golden brown.

    Flip the chicken over and cook the other side for 4 minutes until it also turns golden brown.

    Pour the glaze mixture over the chicken, then reduce the heat to medium and simmer, stirring the sauce once every 30 seconds, for 6–8 minutes until the chicken is cooked through (an internal thermometer inserted into the thickest part should read 165°F).

    Remove the skillet from heat and let the chicken rest in the glaze for 2 minutes so the flavors meld.

    Transfer the chicken to a serving plate and spoon the remaining glaze from the skillet over the top.
