Ingredients

  • 4 whole large eggs
  • 4 oz deli ham, thinly sliced
  • 4 oz sharp cheddar cheese, sliced
  • 2 tbsp butter, divided
  • 2 whole croissants
  • 8 oz fresh orange juice

Instructions

    Crack eggs into a bowl, add a pinch of salt and pepper, then whisk until combined.

    Melt 1 tbsp butter in a nonstick skillet over medium heat, then pour in eggs and stir gently for 3–4 minutes until soft curds form.

    Split each croissant horizontally and layer with ham and cheese on both sides, pressing gently to warm through.

    Divide scrambled eggs evenly between the two croissants and close the tops.

    Toast croissant sandwiches in a dry skillet over medium heat for 2 minutes per side until golden and cheese melts.
