- 2 medium sweet potatoes
- ½ cup pickled green peppers
- ¼ cup cilantro
- ½ cup white cheese (like queso fresco)

Peel and chop the 2 sweet potatoes into 1-inch cubes. Place in a pot, cover with water, and boil until fork-tender, about 15 minutes.
