Ingredients

  • 4 links loukaniko (Greek pork sausages)
  • 1 whole orange
  • 4 cloves garlic cloves
  • 2 medium tomatoes
  • 1 whole cucumber
  • 6 whole radishes
  • 2 tbsp red wine vinegar
  • 1 tsp oregano

Instructions

    Peel the orange, keeping the peel in large strips. Slice tomatoes, cucumbers, and radishes into rounds. Smash garlic cloves with the flat of a knife.

    Heat a heavy skillet over medium-high until it shimmers. Sear the loukaniko for 3 minutes per side until golden and charred.

    Push sausages to the side. Add orange peel and garlic cloves to the pan, cooking for 2 minutes until fragrant and slightly charred.

    Toss tomatoes, cucumber, and radishes in a bowl with red wine vinegar, oregano, salt, and pepper.

    Slide the sausages and charred orange peel onto a plate. Top with the vegetable salad and roasted garlic cloves.
