Ingredients
- 2 fillets sea bream or white fish fillets (skin-on, 6-8 oz each)
- 1 whole (sliced + juiced) lemon
- 3 tbsp extra-virgin olive oil
- ½ cup (chopped) fresh parsley and dill
- 2 cloves (minced) garlic
- 1 to taste sea salt and black pepper

Pat fish dry with paper towels. Season skin-side and flesh-side with salt and pepper.

Heat a heavy skillet or grill pan over medium-high until it shimmers, about 90 seconds.

Place fish skin-side down in the hot pan. Do not move it for 4 minutes until skin crisps.

Flip fish and cook flesh-side 2 minutes more until opaque and flakes easily.

Toss minced garlic, chopped herbs, and lemon slices with olive oil in a small bowl.

Slide fish onto a plate, spoon herb-lemon mixture on top, and squeeze fresh lemon juice over.
