Ingredients
- 2 whole fish or 300g sea bream or white fish fillets (skin-on)
- 3 tbsp olive oil
- 1 whole lemon
- 2 cloves, minced garlic
- 2 tbsp fresh parsley or dill (chopped)
- 1 to taste salt and black pepper

Heat grill or grill pan to high. Pat fish dry and brush all over with olive oil.

Season fish generously with salt, pepper, minced garlic, and half the chopped herbs.

Slice lemon into thin rounds. Grill fish skin-side down 4–5 minutes without moving.

Flip and grill 2–3 minutes more until opaque and flakes easily. Fish is done when it releases from the grate.

Push fish to cooler side of grill. Char lemon slices 90 seconds per side until caramelized.

Transfer fish and lemon to a plate. Drizzle with remaining olive oil and top with fresh herbs.
