- ¼ cup fresh mint, chopped
- ¼ cup fresh parsley, chopped
- 1 tsp ground cumin
- ½ tsp ground coriander
- 1 whole lemon, juiced
- 1 pinch salt and pepper
- 8 pieces lamb chops (rib or loin), 1.5-inch thick
- ½ cup Greek yogurt
Instructions

Pat lamb chops dry with paper towels. Season all over with salt and pepper.

Heat grill to medium-high (or cast iron skillet over medium-high) until surface is hot, ~3 minutes.
- 5
Sear chops 3 minutes per side without moving—meat should develop a charred crust.
- 6
Transfer to a plate. Rest for 3 minutes before serving.
- 7
Top yogurt with fresh mint and a pinch of sumac or paprika if desired. Arrange chops on plates.
- 8
