Ingredients

  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • ¼ cup fresh mint, chopped
  • ¼ cup fresh parsley, chopped
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • 1 whole lemon, juiced
  • 1 pinch salt and pepper
  • 8 pieces lamb chops (rib or loin), 1.5-inch thick
  • ½ cup Greek yogurt

Instructions

    Combine olive oil, garlic, mint, parsley, cumin, coriander, lemon juice, salt, and pepper in a small bowl.

    Pat lamb chops dry with paper towels. Season all over with salt and pepper.

    Coat chops with marinade, turning to coat both sides evenly. Let sit at room temperature for 15 minutes.

    Heat grill to medium-high (or cast iron skillet over medium-high) until surface is hot, ~3 minutes.

    Sear chops 3 minutes per side without moving—meat should develop a charred crust.
