Ingredients
- 1 lb beef sirloin or ribeye, cut into 1-inch cubes
- 3 tbsp white vinegar
- 1 tsp cumin
- 8 cloves garlic cloves, whole
- 1 large red or yellow bell pepper, cut into 1-inch chunks
- 2 tbsp olive oil
Instructions
- 1
Whisk vinegar, cumin, salt, and pepper in a bowl. Add beef and toss to coat, then thread onto skewers alternating with garlic cloves and pepper chunks.
- 2
Heat oil in a cast iron skillet or grill pan over high heat until it shimmers, about 2 minutes.
- 3
Sear skewers 2 minutes per side without moving. The beef edges should char and garlic cloves turn golden.
- 4
Flip and sear the other side until beef is medium-rare and peppers soften at edges, another 2 minutes.
- 5
Transfer to a plate. Squeeze lime over the top and sprinkle with fleur de sel if you have it.
