Ingredients

  • 2 cans (15 oz each) yellow split peas, canned or cooked
  • ¼ cup olive oil
  • 1 whole (juiced) lemon
  • ¼ medium yellow onion
  • 1 to taste salt and black pepper

Instructions

    Drain the split peas well, reserving 2 tablespoons of liquid.

    Finely mince the onion quarter, then add it to a food processor with the split peas.

    Pour in the olive oil and lemon juice, then pulse until smooth and creamy.

    Add the reserved liquid and pulse again until the dip reaches your preferred consistency.
