Ingredients
- 1 lb ground beef
- 1 medium yellow onion, diced
- 2 cups masa harina (corn flour)
- 1.25 cups water, plus more as needed
- ½ cup green olives, chopped
- 1 tsp each cumin and chili powder
- salt and pepper to taste

Heat 1 tbsp oil in a large skillet over medium-high heat until shimmering, ~60 seconds.

Add ground beef and break apart with a spoon, cook until no pink remains, ~5 minutes.

Stir in diced onion, cumin, and chili powder; cook 2 minutes until fragrant.

Fold in chopped olives, season with salt and pepper. Remove from heat and let cool slightly.

Mix masa harina with water and a pinch of salt until a soft, pliable dough forms.

Divide dough into 8 equal balls. Pat one ball flat between plastic wrap to 3 inches.

Place 1.5 tbsp filling on one patty, top with another, and pinch edges to seal.

Wipe skillet clean and heat 2 tbsp oil over medium-high until shimmering.

Pan-fry 2 gorditas at a time, 3–4 minutes per side, until golden brown and crispy.

Transfer to a paper towel-lined plate. Repeat with remaining gorditas.

Serve hot with lime wedges, salsa, and crema if desired.
