Ingredients

  • ½ lb ground beef
  • 3 cups tortilla chips (preferably thick-cut)
  • 1 cup salsa verde
  • ¼ cup white onion, finely diced
  • 1 whole jalapeño, thinly sliced
  • 1 whole lime
  • 2 whole eggs
  • ¼ cup cotija cheese, crumbled

Instructions

    Heat 2 tbsp oil in a 12-inch skillet over medium-high heat until shimmering, about 90 seconds.

    Add ground beef, breaking up with a spoon as it browns, until no pink remains, about 6 minutes.

    Add diced onion and jalapeño, stir for 1 minute until fragrant.

    Pour in salsa verde and stir. Add tortilla chips and toss quickly until chips are coated but still have some crunch, about 2 minutes.

    Push chips to the edges, crack both eggs into the center, cover, and cook until whites set but yolks jiggle, about 3 minutes.

    Top with cotija cheese and squeeze lime over everything. Serve immediately straight from the skillet.
