Ingredients

  • 1 cup instant white rice
  • 5 cups water or vegetable broth
  • 1.5 tbsp fresh ginger, peeled and minced
  • ½ cup frozen green peas
  • 2 tbsp goji berries, dried
  • 1 tbsp soy sauce
  • 2 whole scallions, sliced (white + green parts)

Instructions

    Bring water to a boil in a medium pot over high heat, then stir in instant rice and minced ginger.

    Reduce heat to medium and simmer for 4 minutes, stirring occasionally, until the rice breaks down and the porridge looks creamy.

    Stir in green peas and soy sauce, then cook for 1 minute until the peas are heated through.

    Divide the congee between two bowls and top with goji berries and sliced scallions.

    Serve hot. Adjust salt and add white pepper or chili oil to taste.
