Ingredients
- 8 oz spaghetti
- 4 cups, loosely packed fresh spinach
- 3 cloves, minced garlic
- ¾ cup, finely grated Parmesan cheese

Boil spaghetti in salted water until al dente, ~9 minutes.

While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium.

Add garlic and cook 45 seconds until fragrant, then add spinach in batches.

Stir spinach until fully wilted and any liquid has evaporated, ~2 minutes.

Drain pasta, reserve 1/2 cup pasta water, then toss pasta into the skillet.

Stir in Parmesan and add pasta water 1/4 cup at a time until silky and coats the strands.
