Ingredients
- 1 pound shrimp, peeled and deveined
- 1 large avocado
- 1 medium zucchini
- 1 whole lemon
- 3 stalks green onions
- 3 tablespoons olive oil
- 4 cloves garlic
- ½ teaspoon salt

Pat the 1 lb shrimp dry and season with the 0.5 tsp salt. Slice the 1 zucchini into half-moons and mince the 4 garlic cloves.

Heat 2 tbsp of the olive oil in a large skillet over medium-high. Add the zucchini and cook until lightly browned and tender, about 5 minutes. Transfer to a plate.

Add the remaining 1 tbsp olive oil and the shrimp in a single layer. Cook without stirring until pink on the bottom, about 2 minutes, then flip and cook until just opaque, 1-2 more minutes.

Add the minced garlic and cook, stirring, until fragrant, about 30 seconds. Return the zucchini to the skillet and toss to combine.

Remove from heat. Dice the 1 avocado and slice the 3 green onions. Squeeze the juice of the 1 lemon over the skillet.

Top with the avocado and green onions, and serve immediately. Add black pepper or red pepper flakes if you like.
