Ingredients
- 1 loaf round crusty bread loaf
- 1.5 cups cottage cheese
- 1 cup cherry tomatoes
- 2 tbsp fresh chives
- 1 tbsp olive oil
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- 1
Preheat your oven to 375°F. Cut a circle in the top of the 1 bread loaf and scoop out the soft interior, leaving a 1-inch thick shell. Tear the removed bread into bite-size pieces.
- 2
Place the bread bowl and torn bread pieces on a baking sheet. Drizzle with 1 tbsp olive oil and sprinkle with 0.25 tsp salt and 0.25 tsp black pepper. Bake for 10-12 minutes until the bowl is crisp and the pieces are golden.
- 3
While the bread bakes, halve the 1 cup cherry tomatoes and chop the 2 tbsp chives. In a medium bowl, combine the 1.5 cups cottage cheese, tomatoes, and chives. Stir gently to mix.
- 4
Remove the bread bowl from the oven and let it cool for 5 minutes. Spoon the cottage cheese mixture into the warm bowl, filling it generously.
- 5
Serve immediately, using the toasted bread pieces for dipping. Enjoy while the bowl is still crisp.
- 6
If you have extra filling, serve it alongside in a small bowl for refills.
