Ingredients

  • 1.5 cups cooked rice (white or brown)
  • ¾ lb shrimp, peeled and deveined
  • 1 medium cucumber, diced
  • ½ cup feta cheese, crumbled
  • 3 tbsp butter
  • 1 whole lime

Instructions

    Pat shrimp dry with paper towels. Season with salt and black pepper.

    Heat butter in a large skillet over medium-high until foaming, about 90 seconds.

    Add shrimp and cook without moving for 2 minutes until edges turn pink and opaque.

    Flip shrimp and cook the other side 90 seconds. Add minced garlic and cook 30 seconds until fragrant.

    Divide warm rice between bowls. Top with shrimp, cucumber, and feta.

    Squeeze lime wedge over top and drizzle any pan butter over the shrimp.
