Ingredients

  • 6 oz noodles (ramen, spaghetti, or lo mein)
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil

Instructions

    Boil salted water in a pot. Add noodles and cook until al dente, ~4 minutes. Drain and set aside.

    Cut vegetables into bite-sized pieces (peppers into strips, broccoli into florets, snap peas halved lengthwise).

    Heat vegetable oil in a large skillet or wok over high heat until it shimmers, ~90 seconds.

    Add garlic and ginger. Stir constantly until fragrant, about 30 seconds.

    Add vegetables. Cook, stirring often, until tender-crisp, ~4 minutes.

    Add cooked noodles, soy sauce, and sesame oil. Toss until everything is coated and heated through, ~90 seconds.

    Serve hot from the pan.
