Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked white or brown rice
  • 4 cloves garlic, minced
  • 1 whole lime
  • 1 whole avocado
  • 3 tbsp olive oil

Instructions

    Pat shrimp dry with paper towels. Season with salt and black pepper.

    Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, ~90 seconds.

    Add shrimp to the pan in a single layer. Don't stir for 2 minutes until bottoms turn opaque.

    Flip shrimp, add minced garlic, and cook 90 seconds more until shrimp curl and garlic is fragrant.

    Remove from heat. Squeeze half the lime juice over shrimp, add 1 tbsp oil, and stir once.

    Divide rice between two bowls. Top with shrimp and pan juices.

    Slice avocado and arrange on top. Serve with remaining lime wedge.
