Ingredients

  • 2 cups cooked white rice
  • 1 lb large shrimp, peeled and deveined
  • 1 whole ripe avocado
  • 1 whole lime
  • 2 tbsp chili oil
  • 3 tbsp butter

Instructions

    Warm the cooked rice in a pot or microwave until steaming, about 3–4 minutes.

    Melt butter in a large skillet over medium-high heat until foaming, about 60 seconds.

    Add shrimp and minced garlic (about 3 cloves), season with salt and pepper, cook without stirring for 90 seconds.

    Flip shrimp and cook 60–90 seconds more until opaque and edges just start to curl.

    Squeeze half the lime over the shrimp and turn off heat.

    Divide rice into bowls, top with shrimp, avocado slices, and a drizzle of chili oil. Serve with remaining lime wedge.
