Ingredients

  • 1 whole large egg yolk
  • 3 cloves garlic, minced
  • ¾ cup neutral oil
  • 1 tbsp lemon juice
  • 1 lb large shrimp, peeled & deveined
  • 1 whole baguette, sliced 1/2-inch thick

Instructions

    Whisk egg yolk and minced garlic in a bowl until pale, about 1 minute.

    Add oil drop by drop while whisking constantly until mixture thickens and emulsifies, ~3 minutes.

    Once aioli is creamy, whisk in lemon juice and a pinch of salt. Set aside.

    Heat 2 tbsp oil in a skillet over medium-high until it shimmers, about 90 seconds.

    Sear shrimp in a single layer, 90 seconds per side without stirring until opaque throughout.

    Toast baguette slices in the same skillet, 1 minute per side until golden, then serve alongside shrimp and aioli.
