Frozen Yogurt Cups with Granola & Berries

Ingredients

  • 2 cups Greek yogurt, plain
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 1.5 cups granola
  • 1.5 cups fresh berries (blueberries, raspberries, or strawberries)
  • ½ tsp lemon zest
  • ¼ cup coconut flakes, unsweetened
  • ⅛ tsp salt

Instructions

    Whisk Greek yogurt, honey, vanilla, lemon zest, and salt in a bowl until smooth and fully combined.

    Divide half the yogurt mixture among six small cups or jars, filling each about 1/3 of the way.

    Sprinkle 2 tbsp granola into each cup, then add a handful of berries on top.

    Divide remaining yogurt among cups, filling to the top. Gently level with the back of a spoon.

    Top each cup with remaining granola, a few berries, and a pinch of coconut flakes.

    Cover cups with plastic wrap or lids. Freeze at least 2 hours or up to 24 hours.

    Let sit at room temperature 5 minutes before serving for the yogurt to soften slightly.
