Ingredients

  • 2 cups Greek yogurt, plain
  • 3 tablespoons honey
  • ½ teaspoon vanilla extract
  • ¾ cup granola
  • 1 cup fresh berries (blueberries, raspberries, or strawberries)
  • ½ teaspoon lemon zest (optional)

Instructions

    Place 2 cups Greek yogurt into a medium bowl. Pour in 3 tablespoons honey and 0.5 teaspoon vanilla extract. Stir with a wooden spoon until the mixture is smooth and uniform in color, about 30 seconds.

    Spoon 2 tablespoons of the yogurt mixture into the bottom of each of six clear 6-ounce cups or jars, dividing evenly.

    Sprinkle 2 teaspoons of granola on top of the yogurt layer in each cup.

    Top each cup with 2 to 3 fresh berries, pressing them gently into the granola.

    Divide the remaining yogurt mixture equally among the cups, spooning it on top of the berries in each cup.

    Sprinkle the remaining granola (about 1 teaspoon per cup) over the top of each cup, then scatter 2 to 3 more berries on the surface of each.

    If using lemon zest, sprinkle 1 small pinch over the top of each cup for brightness. Cover the cups with plastic wrap or foil.

    Place the covered cups in the freezer for at least 4 hours, or overnight, until the yogurt is frozen solid. The cups are ready to serve cold from the freezer.
