Ingredients

  • 2 whole bone-in pork chops
  • 2 large russet potatoes
  • 3 cups shredded coleslaw mix
  • 1 medium carrot
  • 3 tbsp mayonnaise
  • 1 tbsp apple cider vinegar
  • 4 tbsp vegetable oil
  • 1 to taste salt and pepper

Instructions

    Cut the 2 large potatoes into thin fries. Toss with 2 tbsp vegetable oil and a pinch of salt. Spread on a baking sheet and bake at 425°F for 25-30 minutes, until golden and crisp.

    While fries bake, pat the 2 pork chops dry and season both sides generously with salt and pepper.

    Heat 2 tbsp vegetable oil in a large skillet over medium-high. Add the pork chops and cook until golden brown and cooked through, about 5-6 minutes per side. Let rest on a plate.

    In a bowl, combine 3 cups coleslaw mix, 1 grated carrot, 3 tbsp mayonnaise, and 1 tbsp apple cider vinegar. Stir until well coated; season with salt and pepper.

    Serve the pork chops with the fries and a generous scoop of coleslaw on the side.
