- 1 lb potatoes
- ½ cup mayonnaise
- 2 tbsp pickles
- 1 lemon
- 1 cup breadcrumbs
- 1 egg
- 2 tbsp oil

Preheat oven to 425°F. Cut 1 lb potatoes into fries, toss with 1 tbsp oil and salt, spread on a baking sheet. Bake until golden and crisp, about 25 minutes, shaking halfway.

Chop 0.5 lb shrimp into small pieces. In a bowl, mix shrimp with 1 egg, 0.5 cup breadcrumbs, and a pinch of salt and pepper until well combined.

Shape the shrimp mixture into 4 oval croquettes. Press each into remaining 0.5 cup breadcrumbs to coat evenly.

Heat 1 tbsp oil in a skillet over medium. Cook croquettes until golden brown on all sides, about 8 minutes total, turning gently.

Stir together 0.5 cup mayonnaise, 2 tbsp chopped pickles, and a squeeze of lemon juice to make tartar sauce.
