Ingredients

  • 1.5 lb chicken thighs
  • 4 cloves garlic
  • 3 medium shallots
  • 5 whole red chilies
  • ½ cup sweet chili sauce
  • ¼ cup peanuts
  • 1 medium cucumber
  • 1 medium tomato

Instructions

    Season the 1.5 lb chicken thighs with salt and pepper. Heat 2 tbsp oil in a large skillet over medium-high; fry chicken skin-side down until golden and crispy, about 6-8 minutes per side, until cooked through. Set aside.

    In a blender, combine 4 garlic cloves, 3 shallots, and 5 red chilies with 2 tbsp water; blend into a smooth paste.

    In the same skillet, add the spice paste and cook over medium heat until fragrant and darker, about 3-4 minutes, stirring often.

    Stir in the 1/2 cup sweet chili sauce and 1/4 cup crushed peanuts; simmer for 2 minutes until slightly thickened.

    Return the fried chicken to the skillet, tossing to coat each piece in the sauce. Cook for 2-3 minutes until heated through and glossy.

    Slice the cucumber and tomato; serve the chicken topped with the fresh slices and extra crushed peanuts if desired.
