- 1 lb chicken breast
- 1 cup pineapple chunks
- 1 red bell pepper
- 2 tbsp curry powder
- 1 can (13.5 oz) coconut milk
- 2 cups cooked rice

Cut the 1 lb chicken breast into bite-sized pieces and the 1 red bell pepper into strips. Heat a large skillet over medium-high heat and add the chicken, cooking until browned on all sides, about 5 minutes.

Add the 2 tbsp curry powder and stir to coat the chicken, cooking for 1 minute until fragrant.

Pour in the 1 can coconut milk and add the 1 cup pineapple chunks and the bell pepper. Bring to a simmer, then reduce heat to medium-low and cook until the chicken is cooked through and the sauce thickens slightly, about 8-10 minutes.
